(Makes 12)

Ingredients:

4 ounces (about 3/4 cup) Semi-Sweet Chocolate Chips (specialty grocery stores stock Vegan and organic varieties)
12 strawberries (preferably Organic)

Directions:

Line a plate with parchment or greased foil. Place chocolate chips in a glass bowl or measuring cup and microwave on high, 1 minutes, or until the chocolate is mostly melted, a few lumps is okay. Stir the chocolate until it is lump free. One at a time, dip strawberries into melted chocolate and place on the prepared plate. Refrigerate about 10 minutes to harden. Store covered and refrigerated up to 1 day.

One-Minute Chocolate Cake
1 Serving

1 tablespoon plus 2 tsp cocoa powder
3 tablespoons cake flour
1/8 tsp salt
T tbsp + 2 tsp sugar
1/4 tsp baking powder
1 tablespoon vegetable oil
3 tablespoons milk
1/4 tsp pure vanilla extract

In bowl add oil, milk and extract and set aside. Sieve dry ingredients into a separate bowl. Add liquids into dry ingredients and stir until moist. Do not over mix otherwise the cake with be tough.
Transfer to a greased ramekin, or coffee mug. Microwave 30-40 seconds.

Serve warm with a scoop of Ice Cream or add Frosting!

Asparagus is a great spring time vegetable!

Buying Tip: The slender, earliest stalks are the most tender.

Preparation Tip: Begin preparing the asparagus by simply trimming off the bottom ends of the stalks, about 1  inch.

Colorful Spring Penne with Cherry Tomatoes and Asparagus

Ingredients:

8 ounces penne pasta

3 tablespoons olive oil

2 garlic cloves, minced

1 1/2 pounds thin asparagus, trimmed and cut into 1-inch pieces

Salt and freshly ground black pepper

2 cups cherry tomatoes

1 cup fresh or frozen sweet peas

1/2 cup chicken stock

1 cup grated Parmesan cheese

2 tablespoons chopped fresh basil leaves

Directions:

Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.

In a large saute pan, heat the oil over medium heat. Add the garlic, cook about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the chicken stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.

Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.
