Ingredients:
• 8 whole Crusty Bread Rolls
• 2 Tablespoons Butter, Melted
• Salt And Pepper
• Assorted Fillings (See Suggestions In Instructions)
• 8 whole Eggs

Directions:
Preheat your oven to 350ºF. Slice off the top of each roll and scoop out the soft bread inside, leaving the sides of the roll intact. Brush the inside of each roll with the melted butter and season with salt and pepper.
Let your guests fill the roll with their favorite toppings (see suggestions below). Crack an egg or egg white on top, season with salt and pepper, and place on a cookie sheet. Bake for 10-12 minutes and then cover the pan loosely with foil. Bake an additional 20-25 minutes, or until the egg is just set.
Suggested fillings: grape tomatoes, cilantro, parsley, thyme, shredded cheese, herbed goat cheese, caramelized onions, pre-cooked breakfast potatoes, spinach artichoke dip, deli ham, cooked sausage, crumbled bacon, onions, mushrooms, spinach, feta cheese.

Deeply colored and richly flavored sockeye salmon is an excellent match for a sweet-tart mango relish. Be careful not to overcook the salmon; unlike other types of salmon, sockeye’s distinctive reddish hue does not lighten much with cooking, so rely on a tender texture to determine done-ness rather than on the fish’s color.

Serves 4

Ingredients:

4 (6-ounce) sockeye salmon fillets, thawed if frozen

1 1/2 teaspoons expeller-pressed canola oil

1/4 teaspoon freshly ground black pepper

1 teaspoon fine sea salt, divided

2 medium mangoes, preferably Ataulfo, peeled, pitted and diced

1 fresh jalapeño pepper, seeded and finely chopped, or to taste

1 shallot, finely chopped

1 1/2 tablespoons lime juice

Chopped fresh mint or cilantro for garnish

Direction:

Preheat oven to 425°F. Brush salmon on all sides with oil and sprinkle with pepper and 1/2 teaspoon salt. Place salmon skin-side down in an 8-inch square baking dish. Bake for 6 minutes.

Meanwhile, in a medium bowl, combine mangoes, jalapeño, shallot, lime juice and remaining 1/2 teaspoon salt. Sprinkle mango mixture over salmon and continue to bake until salmon just flakes with a fork (do not overcook), about 10 more minutes. Serve garnished with mint.

Kids will love to help you make this healthy snack since it’s fun to spread the nut butter and sprinkle the chocolate chips. No corer in the kitchen drawer? Slice the apples into rounds first then use a small cookie cutter to remove the core from the center of each slice. Wrap sandwiches tightly and tuck them into lunchboxes, if you like.
Ingredients:
2 small apples, cored and cut crosswise into 1/2-inch thick rounds
1 teaspoon lemon juice (optional)
3 tablespoons peanut or almond butter
2 tablespoons semisweet chocolate chips
3 tablespoons granola
Directions:
If you won’t be eating these tasty treats right away, start by brushing the apples slices with lemon juice to keep them from turning brown.
Spread one side of half of the apple slices with peanut or almond butter then sprinkle with chocolate chips and granola. Top with remaining apple slices, pressing down gently to make the sandwiches. Transfer to napkins or plates and serve.
